Cheese Cannelloni

Cheese Cannelloni - 4aKid

I absolutely adore ricotta cheese, so when I came across this recipe, i had to give it a go. The tubes are stuffed with a rich and flavoursome ricotta filling, then covered in marinara and then topped with a generous amount of mozzarella! Yum 🍝. Plus, it's a great make-ahead dish that freezes well.

Prep Time: 20 minutes
Cook Time: 50 minutes
Total Time: 1 hour 10 minutes
Servings: 12 

Ingredients:

  • 12 dried cannelloni oven ready
  • 2 ½ cups marinara sauce divide
  • 1 cup mozzarella cheese shredded

Filling:

  • 2 cups ricotta cheese
  • 1 package frozen chopped spinach defrosted and squeezed dry
  • 2 eggs
  • ½ cup mozzarella cheese shredded
  • ¼ cup parmesan cheese shredded
  • 1 teaspoon Italian seasoning

Instructions:

  • Preheat oven to 350°F.
  • Mix all filling ingredients in a small bowl. Place into a piping bag or large zippered bag and set aside.
  • Add ⅓ cup water to the marinara sauce and place ½ cup sauce in the bottom of a 9x13 pan.
  • Snip off the corner of the zipper bag if using and fill each cannelloni placing in the pan. Top with remaining marinara sauce.
  • Cover and bake 40 minutes. Add cheese and bake covered an additional 15-20 minutes.
