These Homemade Popsicles are a delightful way to cool off while still enjoying a healthier treat. By blending creamy yoghurt, fresh fruit, and a touch of honey, you can create refreshing popsicles that offer natural sweetness and a bright burst of flavour. Perfect for summer afternoons, post-workout snacks, or even as a fun dessert for guests.
Ingredients
- 2 cups yoghurt (Greek, plain, or your favourite variety)
- 1–2 tablespoons honey (adjust to taste)
- 1 cup fresh fruit (e.g., strawberries, blueberries, peaches, or mango)
- 1 teaspoon lemon juice (optional, for added tang)
- Pinch of salt (optional, balances sweetness)
Optional Add-Ins
- Chia seeds or flaxseed for extra fibre
- Coconut flakes for a tropical twist
- Vanilla extract for a hint of sweetness
- Cinnamon if pairing with fruits like peaches or apples
Instructions
1. Prepare the Fruit
- Wash and pat dry your chosen fruit.
- Peel if necessary (e.g., peaches or mango).
- Chop larger fruits into small chunks. Berries can usually stay whole or be halved if large.
2. Blend the Base
- In a blender or food processor, combine the yoghurt, honey, and the prepared fruit.
- If you’d like a brighter flavour, add 1 teaspoon lemon juice or a small pinch of salt.
- Blend until the mixture reaches your desired consistency—fully smooth for a uniform popsicle, or pulsed briefly if you prefer fruit chunks.
3. Taste and Adjust
- Sample the mixture. If it’s not sweet enough, add more honey.
- If the flavour is too mild, squeeze in more lemon juice or add a dash of vanilla extract.
- Blend again briefly to incorporate any additions.
4. Fill the Moulds
- Pour the mixture carefully into popsicle moulds, leaving a little space at the top for expansion.
- If you don’t have popsicle moulds, you can use small paper cups and popsicle sticks.
5. Freeze
- Place the filled moulds in the freezer for at least 4–6 hours, or until the popsicles are fully set.
- If using paper cups, freeze for about 1 hour, then insert the sticks once the mixture is semi-frozen and can support them.
6. Unmould and Enjoy
- To release the popsicles, briefly run warm water over the outside of the moulds, or let them sit at room temperature for a minute.
- Gently pull the sticks to remove the popsicles.
- Enjoy immediately, or store them in a freezer-safe container for up to 1–2 weeks.
Tips for Delicious Yoghurt Popsicles
- Choose high-quality yoghurt: Greek yoghurt yields a creamier texture, but any variety works.
- Experiment with fruits: Try combinations like strawberry-banana, peach-raspberry, or blueberry-mango.
- Layering: For a fun striped effect, blend separate fruit mixtures and pour them in layers, freezing each layer briefly before adding the next.
- Swirl in extras: Gently stir in granola or swirl in nut butter for added texture and flavour.
Enjoy Homemade Popsicles with Yoghurt, Fruit, and Honey as a refreshing summer snack or a guilt-free dessert. They’re simple to customise, easy to make, and sure to please kids and adults alike.
