Recipe: Coconut Ice Gateau Dessert

Ingredients: For the Coconut Cake:

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup coconut milk
  • ½ cup shredded coconut (sweetened or unsweetened)

For the Coconut Mousse:

  • 1 cup coconut cream (from canned coconut milk)
  • 1 ½ cups heavy cream
  • ¼ cup powdered sugar
  • 1 teaspoon coconut extract

For the Coconut Ice:

  • 1 ½ cups powdered sugar
  • 2 cups desiccated coconut
  • 3 tablespoons sweetened condensed milk
  • 1 teaspoon vanilla extract
  • A few drops of pink or red food coloring (optional)

Instructions: For the Coconut Cake:

  1. Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the coconut milk, beginning and ending with the dry ingredients.
  6. Fold in the shredded coconut until well incorporated.
  7. Divide the batter evenly between the prepared cake pans.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

For the Coconut Mousse:

  1. In a mixing bowl, whip the coconut cream, heavy cream, powdered sugar, and coconut extract until stiff peaks form.
  2. Place the coconut mousse in the refrigerator until ready to assemble the gateau.

For the Coconut Ice:

  1. In a large bowl, combine the powdered sugar, desiccated coconut, sweetened condensed milk, and vanilla extract.
  2. Add a few drops of pink or red food coloring if desired, and mix until the coconut mixture turns pink.
  3. Press the coconut ice mixture into an 8-inch square baking dish lined with parchment paper. Smooth the top with a spatula.
  4. Refrigerate the coconut ice for at least 1 hour until set. Once set, cut the coconut ice into small cubes.

To Assemble the Coconut Ice Gateau:

  1. Place one layer of the coconut cake on a serving platter or cake stand.
  2. Spread a generous layer of coconut mousse over the cake layer.
  3. Add some cubes of coconut ice on top of the mousse.
  4. Place the second layer of coconut cake on top and repeat the process with the mousse and coconut ice cubes.
  5. Finish by spreading a thin layer of coconut mousse on the top and sides of the gateau.
